Easy Recipes: Cilantro Lime Cauliflower Rice

Cilantro and lime is one of my favorite combinations. I especially love cilantro lime rice! If you're not ready to go back to Chipotle yet or if you're looking for a super easy substitute for rice that still looks like rice and tastes good, you'll want to try this! My kids love it! And it is gluten free and vegan friendly! All you need to do is throw some cauliflower in a blender or food processor and process until it resembles rice. Then, toss it in a pan with some garlic, and mix in cilantro and lime juice, and you're done in about 20 minutes!



- 1 head of cauliflower or 1 bag of cauliflower florets

- 1 lime

- 2 cloves of garlic

- chopped cilantro



1. Place cauliflower florets in blender or food processor and process until it resembles rice. If using a cauliflower head, remove the leaves and cut into florets.

2. Mince garlic and cook over medium heat for 5 minutes. Add cauliflower to the pan and stir until garlic is cooked (about another 5-7 minutes).

3. Mix with cilantro and lime juice.

4. Enjoy!
